Nutty Energy Bars


Ingredients:

• 1 ½ cups of rolled oats
• ½ cup of sunflower seeds
• ½ cup of raw pumpkin seeds
• ½ cup of raw almond ( chopped )
• ½ cup of raw hazelnut ( chopped )
• ½ cup of raisin
• ¼ cup of sesame seeds (optional)
• 50 grams of butter
• ½ cup of raw honey
• 2 tablespoon of brown sugar
• Aluminum foil or baking or waxed paper

Preparation:

1. Line a square baking tin with aluminum foil. Set aside.

2. In a non-stick frying pan, stir in the oats, sunflower seeds, pumpkin seeds, sesame seeds, for a few minutes over low to medium heat. Transfer it to a metal bowl, set aside to cool.

3. Again in the non-stick pan, stir in the almond, hazelnut for a few minutes or till fragrant pour it in to the same metal bowl to set aside to cool.

4. When the nuts and seeds are cooled, stir in the raisin and mix well.

5. Cook the butter, honey and sugar in a small saucepan over medium heat. Stir constantly for 3 to 4 minutes or until sugar has dissolved.

6. Bring to the boil and reduce the heat to low. Simmer, without stirring, for 5 minutes. Add butter mixture to dry ingredients. Stir well until combined.

7. Spoon the mixture into the tin. Use a large metal spoon to press the mixture down firmly and evenly.

8. Allow to cool and then cut into squares or rectangles.

Keep these energy bars in the fridge. These bars can be stored up to 2 weeks or more.
