Nutty Energy Bars


Ingredients:

• 1 ½ cups of rolled oats
• ½ cup of sunflower seeds
• ½ cup of raw pumpkin seeds
• ½ cup of raw almond ( chopped )
• ½ cup of raw hazelnut ( chopped )
• ½ cup of raisin
• ¼ cup of sesame seeds (optional)
• 50 grams of butter
• ½ cup of raw honey
• 2 tablespoon of brown sugar
• Aluminum foil or baking or waxed paper

Preparation:

1. Line a square baking tin with aluminum foil. Set aside.

2. In a non-stick frying pan, stir in the oats, sunflower seeds, pumpkin seeds, sesame seeds, for a few minutes over low to medium heat. Transfer it to a metal bowl, set aside to cool.

3. Again in the non-stick pan, stir in the almond, hazelnut for a few minutes or till fragrant pour it in to the same metal bowl to set aside to cool.

4. When the nuts and seeds are cooled, stir in the raisin and mix well.

5. Cook the butter, honey and sugar in a small saucepan over medium heat. Stir constantly for 3 to 4 minutes or until sugar has dissolved.

6. Bring to the boil and reduce the heat to low. Simmer, without stirring, for 5 minutes. Add butter mixture to dry ingredients. Stir well until combined.

7. Spoon the mixture into the tin. Use a large metal spoon to press the mixture down firmly and evenly.

8. Allow to cool and then cut into squares or rectangles.

Keep these energy bars in the fridge. These bars can be stored up to 2 weeks or more.

Vanilla Ice- cream with Tainted Coffee topping.


Ingredients :

Vanilla ice-cream

1 wafer stick

1 teaspoon of instant coffee

1 teaspoon of hot water

½ teaspoon of Liquor “ Orange Grand Marnier” or any liquor of your choice

Methods :

Dissolve the instant coffee with a teaspoon of hot water

Set aside to cool, then add in liquor onto the melted coffee

Scoop the ice-cream onto a cup, top it up with the melted coffee before serving.

FINALLY, EnjoY tHe CoOL DEsSeRt FoR a HoT dAY! Feeling Giddy???

WARNING!!! This is only for adults. For kids, ignore the tainted coffee totally, but top it up with melted chocolate instead.

Melting Moments - Seafood Chowder



Ingredients :
½ pc fresh salmon (skinned, cut into small cubes)
50 grms prawns( shelled, deveined, diced)
50 grms calamari (cleaned, diced)
50 grms clam (cleaned,boiled, shelled)
50 grms bacon chips
2 small potatoes ( boiled, skinned, diced)
2 pips of garlic (finely minced)
1 can of Campbell cream of mushroom (family pack)
1 bowl of water
2 tab spoon of wheat flour (add a little water to dissolve)
Salt, sugar, pepper to taste
Method :
In a non- stick pan, fry the bacon chips and garlic until light brown (drained the excess oil and set aside)
In a pot, pour in the cream of mushroom, add in water little by little, and stir to mix it evenly
When it started to boil, add in all the seafood, fried bacon chips, stir well.
Prepare 2 tab spoon of wheat flour mixed with some water to dissolve before adding in to the soup(to thickened the soup)
Lastly, add in boiled, diced potatoes, salt and sugar and pepper to taste
Serve while it’s hot with garlic bread.
It’s bowl licking good!!!

It's a make-up replacement soup that I missed many years ago "Ivar's clam chowder". This time, the soup contains all types of seafood instead of clam alone. Will post the recipe when I'm done with my batch of baking. Keep a look out for this pot of "white gold"!

Simple recipe for kids to enjoy!



A pot of creamy tomato stew (Chinese style)

Ingredients:

500 grams fresh tomatoes (cut into quarters)

300 grams minced meat (marinate with salt, pepper, sugar)

½ clove garlic (minced)

2 bowls of water or chicken stock

2 table spoon cooking oil,

Salt and sugar to taste

Method:-

Heat oil in a wok and lightly brown the minced garlic

Add in minced meat, stir-fry till the meat is dried

Put in tomatoes, water and seasoning. Bring to boil

Stir occasionally and simmer till the gravy is thicken

Serve with steam rice and fried-chicken.
