This year, we've decided to have a different menu totally for Christmas. We had "Bak Kut Teh" for Christmas Eve dinner ( in a restaurant) and Stir-fry crab for Christmas Dinner instead of the normal Roast Turkey. It was indeed a wonderful and peaceful moment spent with family.

Roasted Pork Ribs




Ingredients:

6 strips pork ribs (cut into 2 halves horizontally, makes 2 big blocks)

1 teaspoon salt

2-3 tbsp sugar

2 tbsp oyster sauce

2 tbsp tomato sauce

Dash of grounded black/white pepper

Methods:

Clean and dry pork ribs with kitchen towel. Rub meat with salt,sugar and pepper then oyster and tomato sauce. Keep in the fridge for at least 5 hours.

To cook, cover the ribs with aluminium foil and bake for 45 minutes,

To brown the meat, remove foil and grill the meat till brown.

Beef Pie In Ramekins




Ingredients:

300 gr minced beef
1 can baked beans
2 onions ( cut into small cubes)
2 pips garlic ( finely chopped)
2 tbsp oil
mixed herbs

6 potatoes
1/2 cup fresh milk
1 tbsp butter
salt to taste

Method:

In a big pot, add salt in water,boil deskined pototoes till soft. drained, mashed with butter and fresh milk. set aside for piping.

In a hot kuali, put in oil then garlic. add in onions then beef. stir till cooked. Add in baked beans and mixed herbs. Mix well.Scoop into small ramekin case pipe in mashed potatoes on top.
Serve while it's piping hot!

Shells & Shellfish Salad







Ingredients:

450 grams medium-sized conchiglie

1 cup mayonnaise

2 tbspoon fresh milk

500 grams cooked shellfish flesh: shrimp,crab meat, etc.

½ green pepper, ½ red pepper, ½ orange pepper

Fresh lemon juice

Salt, freshly ground black pepper

Method:

Cook pasta in boiling salted water till soft. Drain,rinse under cold water and drain dry.

In a mixing bowl, pour in mayonnaise, fresh milk, lemon juice, grounded pepper. Mix till even. Pour in cooked pasta and shellfish and mix till well blended. Add in green,red and orange pepper to add flavor and color to it. Serve chilled.

Handing over prayer cards to Team 5


10th October 2009. This was a remarkable day as The Liews, The Lee and The Lim made a point to run and pray for our beloved country, Malaysia. The team members were Harry, Po Yen, CK, Ben & Tim. They took with them the road map and prayer cards for the 5km prayer run.

Po Yen injured his toe two days before the date and hence could not run. Nevertheless, the desire to pray was there and he joined them in prayers while driving along with the runners.

I was the appointed Team Manager (i.e time keeper, water supplier, photographer and driver). I am proud to have been able to contribute to this run. Hopefully, the next round I would sign up as a runner too! We were very glad to have Michelle (a second year medical student) who came along as the medic.

Our team, AG14 team 4, managed to complete the route without any incident and hand over the prayer cards to the next team to carrying on with the vision.

Thank you Lord for Malaysia! May Your Glory fill this nation, Amen!

This Crispy Bread, “ Lor Ti Kok”, was specially bought for us by a couple who were at a Food Adventure Trip to Penang. They knew that we love coffee and thought that this would be a good compliment to a drink of kopi.
