Chocolate Rice Truffles

My family loves sweet desserts. Each time after we had a meal, we will always look for something sweet to munch, otherwise the meal is not considered complete. It can be just a stick of Kit Kat, a small block of chocolate or a piece of left over cake.

Just few days ago, right after lunch, as usual my kids will open the fridge and look for desserts. Much to their dismay, not a single sweet dessert is left for them. So, in order to fulfill the craving, we all agreed to make some quick-mix truffle. I made these within half an hour with the eager help from Ben and Tim and as you can imagine, 1/3 of the portion has actually eaten before we can fridge it till evening.

These truffles were modified by Ben and Tim. They preferred chocolate rice. I prefer the cocoa powdered ones. Ck….. Loves them all!

Recipe for Chocolate Rice Truffles

Ingredients:

8 pieces Digestives biscuits

150 grams Vochelle cooking chocolate bar

50 grams butter

40 grams icing sugar

Cocoa powder

Chocolate rice

Small cup-cakes casing

Method:

Crush Digestives biscuits in a plastic bag until fine, set aside

Melt chocolate in microwave for about 40 seconds, add in butter then melt another 15 seconds

In a mixing bowl, pour in crushed Digestives biscuits, icing sugar and mix until even. Add in melted chocolate and butter; mix well till form even dough.

Roll a spoonful of dough, like a marble size. Coat it with cocoa powder or chocolate rice.

Place each truffle in a paper cup-cake casing and fridge till harden. Serve when it’s chill.

Pickled Pumpkin & Painted Orange !

Have you tasted "pickled pumpkin"? I haven't until last night. It's very crunchy, sweet and sour at the same time. It taste very much like any other pickles namely, papaya, manggo or zucchini. But, this one.... ROCKS!

Last night 3 HF(Genesis,Chrysolite & Emerald) met to have a time of fun! A time of games, fruits and nuts. We had lots of food and fruits, but my eyes and mouth were set on this interesting homemade "pickled pumpkin" by Susan Sim. I like it very much and I'll try to make this, one day.

We had a wonderful time of laughing till tearing playing those funny games that Jerry introduced. Me,Tiffany and Daniel won one of the " Naming Game". We had a Trophy!!! A hand-painted, Homemade Trophy! by Jerry...... 2-in-1 trophy... can display also can eat! Taadaa... see my trophy :)
