Grilled Lamb Patties

Juicy grilled lamb patties

Yesterday we had rather light dinner. At around 10pm, the kids started to ask for supper. CK took the opportunity to try out a recipe which had been floating in his mind....lamb patties. We had 500 gr of minced meat in the freezer, therefore only 3 patties could be made to feed the hungry boys! If you are interested, you can have this special recipe with CK's blessings.

Ingredients:

500 gr minced lamb
2 yellow onions (cut into cubes)
6 pips garlic (finely chopped)
a pinch of fine salt
a few dashes of Rosemary and black pepper.

Method:

In a mixing bowl, mix all ingredients thoroughly. Divide into few small portion.Shape into a ball of meat and flatten the top.
Grill in an oven for about 10 minutes.
Serve with bread or Naan.

Blessed New Year !



Sambal Pork - My kids favourite meat dish.

Sambal Pork- from my mother's recipe collection. I recalled her recipe from memory and she used to say... agak agak only lah, from experience, you'll know what to add and what not to the next time.

Ingredients:

600 gr 3 layer pork ( cut into small bit size)
1/2 clove garlic ( blend together with shallots into fine paste)
1/2 bowl of shallots
1 1/2 tablespoons "tau chu"
1 tsp chilli paste
1 tsp asam jawa
1 tsp sugar
3 tbsp oil
1 bowl of water
some black Fungi ( soak, cut into thin slices)

Methods:

Heat oil in a kuali, stir in blended garlic and shallots. fry till fragrant. Add in chilli paste then "tau chu".
Stir in sliced pork. fry till fragrant then add in sugar, asam jawa juice. Later, add in black fungi. Keep stiring then turn down fire and simmer till cook.

This year, we've decided to have a different menu totally for Christmas. We had "Bak Kut Teh" for Christmas Eve dinner ( in a restaurant) and Stir-fry crab for Christmas Dinner instead of the normal Roast Turkey. It was indeed a wonderful and peaceful moment spent with family.

Roasted Pork Ribs




Ingredients:

6 strips pork ribs (cut into 2 halves horizontally, makes 2 big blocks)

1 teaspoon salt

2-3 tbsp sugar

2 tbsp oyster sauce

2 tbsp tomato sauce

Dash of grounded black/white pepper

Methods:

Clean and dry pork ribs with kitchen towel. Rub meat with salt,sugar and pepper then oyster and tomato sauce. Keep in the fridge for at least 5 hours.

To cook, cover the ribs with aluminium foil and bake for 45 minutes,

To brown the meat, remove foil and grill the meat till brown.
