Ingredients:
60 dark Chocolate,chopped
125 gr Butter
250 gr. Castor Sugar
2 Eggs
310 gr Self Raising Flour
¾ cup Milk
1 tbsp Grated orange rind
1 ½ tsp Vanilla essence
Method:
Grease a 23cm square cake tin, line with paper; grease paper
Melt chocolate over hot water; cool to room temperature
Cream butter, essence and sugar with an electric mixer until light and fluffy. Add egg one at a time, beat well after each addition. Fold in sifted flour and milk.
Divide mixture into 2 bowls, stir in chocolate into 1 bowl and orange rind into the other. Drop spoonfuls of chocolate mixture into the corner and centre, then spoon the orange mixture into the spaces. Swirl knife through mixture once or twice.
Bake in moderate oven for about 30 minutes.

3 Egg Sponge
Ingredients:
½ cup castor sugar
¼ cup corn flour
¼ cup plain flour
¼ cup self-raising flour
Methods:
Have eggs at room temperature. Beat whole eggs in a small bowl with electric mixer until thick and creamy. Add sugar about 1 tablespoon at a time, beating each addition until sugar is dissolved .
While eggs and sugar are beating, prepare a deep 20cm ring pan by greasing evenly and dust with some flour; sift dry ingredients together 3 times, to aerate and mix the flours.
When sugar is dissolved, transfer mixture to larger bowl; this makes it easier to fold the dry ingredients through the egg mixture. Sift the flours over the egg mixture, use a spatula to lightly fold the flour through. Heavy handling at this stage will give a flat tough sponge.
Spread mixture evenly into ring pan and bake in moderate oven for 20- 25 minutes. When cook, turn sponge immediately to wire rake to cool.

Yesterday, while I was busy at the kitchen, Tim decided to join me prepares some orange chocolate chip cupcakes for tea time. Since, my Kenwood is busy with my other batter, so we decided to use “TIMwood” ( Tim’s hands) as my manual mixer to do this small portion of batter . He was quite a baker, he whisk the eggs and butter then pour in the flour and milk and chocolate chips and some orange rind and juices. And the results…… a picture worth a thousand words. The cupcakes were delicious!
